I am a bit confused with the symbols used for heater and cooler and/or condensers in P&ID's. For eg. sometimes the cooler is shown with arrow upwards and sometimes I have seen it arrow downwards - see attachment.
Which is the right one?

my 2 cents...
in a P&ID you don't show Condensers or Heaters (with one side only) but Heat Exchangers, with both sides (ie shell & tubes).
Condensers and Heaters are, sometime, shown on PFDs (Process Flow Diagrams). In that case, the convention I learnt in the '70s is:
- arrow with up pointer defines the utility side becoming hotter (temperature up): so, this is the Cooler;
- arrow with down pointer defines the utility side becoming colder (temperature down): so, this is the Heater.
The relevant symbols should only show the circle and the arrow.

I agree with Gegio1960.
1) Those symbols are used in PFDs and not P&IDs
2) If the utility stream is getting heated-up then the arrow points up and vice versa

I've been working as a process engineer since 1966. Never have I seen any convention. And I don't know why you even ask.
Temperatures in and out on the process side should always be shown on the PFD in some manner. So, what more would one need to know?
